  Chilaquiles Guajillo

Ingredients

400 g dry tortillas
1 tsp soybean oil
40 g Guajillo chilies
1/4 onion in one piece
1 garlic clove
2 tbsp chicken broth
10 epazote leaves
1/4 cup Soyarne
1 tbsp chopped onion
100 g fresh cheese or Chihuahua cheese

Method

• Heat oil and fry tortillas cut in quarters until golden
• Wash chilies and remove veins. Cover with water and boil
for 5 minutes
• Mix chilies, entire piece of onion and garlic in a blender
• Heat oil and fry
• Add 4 cups of water, broth and epazote.
mix in Soyarne. Cover and cook over low heat for 20 minutes.
